FC, and everyone who made great guesses....Cathy got it. It is an old bulk milk tank that has been put into use to collect maple sap to boil down into syrup. This one is at the bottom of our maple woods right along the road. Our maple fella comes by with a tank on his truck and pumps it out every little while.

Steve, the earlier in the season, the lighter the color and the better the flavor. Last year our guy must have given us first run (he gives us two gallons every year) because it is the best I have ever tasted. Being unable to use two gallons we give a lot a way, but I think we will hang on to last year's crop.

LOL, but the actual answer tastes much better! Not really sure I'd want to taste a leprechaun.
Do you have it as light or darker color after it's all done? (Obviously naieve here)
